You'd have a smoking fast cartridge for sure, be cool if you just want something different.
If it were me I'd just build another 7 SAUM for simplicity of components, dies etc. maybe you'll even be able to shoot the same load

6.8 is the same as .270
Doing a 7-300 PRC at the moment myself.
A 6.8-300 PRC is going to cut your barrel life down quite a bit, but it isn't as important for a hunting rifle. What is important is the availability of quality components, and that is something that the .277 diameter lacks regarding heavy for caliber projectiles at the moment.

My point was the same as that above- very limited bullet selection, and too light IMO- the heaviest .270's are around 170 grains from what I see (never owned one).
If I were going to neck down the .300, I'd do 7mm- JMOYMMV.
