And since it’s this thread, here’s a not so appetizing picture of Wednesday’s dinner. I forgot to take a picture of it plated. It looked much better.

I was craving a meal that I hadn’t eaten in probably 50 years-ish. Chicken and dumplings. I didn’t have enough chicken or vegetables in the house but it went in. Essentially a thick soup that would still cook into the outside 1/4” or so of the dumplings.

I know that dumplings are made in many if not most parts of the world. Thus everybody’s idea of the ‘right’ dumpling varies. These were perfect to my memory and taste buds. Essentially soft biscuit dough dropped into the top of the cooked and lightly simmering stew/broth/reduction. A touch of Parmesan and garlic powder in the dough.

Twas yummy!😋
Everyone that sees some sort of stew-type thing; “Don’t you fucking dare put beans in that!”

Told the wife we needed a healthy salad for supper.

Iceberg lettuce, carrots, 4 colors of bell peppers, onions, boiled eggs, bacon chunks, cheese, crutons, pecans, tomatoes and ranch dressing.


I think chopping all this up was a healthy work out anyway.

Found a no bake cheese cake mix in the pantry, score.

So I don't follow direction well.

Added a little cinnamon and a couple chunks of bakers chocolate to the crust. Had a bit of half and half and added it to milk for the filling.

Grabbed the strawberries from the fridge and came to a halt, fuzzy, damn. Returned with raspberries I broke up with sugar a little vanilla and a couple of shots of vodka.

For a minimal effort it came out very tasty. I will change the way the chocolate is added. Instead of mixing it in the crust, it will go on top of it. The chocolate stuck to the pie plate.
 
I do prefer the "German " baked style cheese cake myself. But I don't multi task well.

Was prepping / cooking my meat as well.

Fire weather red flag warnings tornadoes hail and 70mph winds dictated the swap from BBQ pulled pork slow done on the smoker to shuck and jive mode.

99 cent a pound pork butt got packed in top and bottom with tomatoes, cilantro, Mexican oregano, garlic onions and red chili pepper sauce.
