Im looking at zeroing my gun with a few different rounds.

Is it best to zero with the highest velocity or the lowest then set my zero stops. Then use the offsets in the applied ballistic app to store the zeros for the other projectiles.

I think i understand how this works but im not 100%

You need to figure out what all your zeros are. I have a H59 reticle so I hardly dial now. What I do on my scope is write down the zeros for each gun. Then I zero my scope according to my DOPE and just hold. If you have to dial you can just dial. I use my scope for about 6 different calibers with all sorts of zeros. It has worked fine for me

My wife thinks I only have 3 guns

 
if youre not wanting to reset your turrets, id zero at 100 with the load that has the highest POI (not speed, actual POI)...then id shoot the other loads and input the offsets into my ballistic calc...this way the only way youre ever dialing is up for 100 yds and anything further out, allows zero stop to not get in the way, as well

You are on the right path. Zero Offset is the left/right adjustment and zero height is the up and down adjustment. Follow it and see if you like the results. As with any zero, you will want to shoot it periodically and confirm the numbers and the results are all consistent.
