The AICS AX post 2014 chassis has it's folding to the right side, but it is hitting the bolt and won't close.
Would it be possible to change the folding to the left?

I cant confirm if the rears are identical on aics stocks but If you buy an AT rear you can debond it and swap it out. Plenty of AT guys would gladly swap with you. But no way to change the existing one.
When i had that issue i just lifted the bolt handle and used shock cord from the turret to bolt handle to keep it forward. Stock folds no problem then.
