Im trying to mount a 338 Brake from TBAC, but the way my threads landed, I need to remove the majority of the washers from the peel washer, so when it comes time to finely peel individual layers, the remaining washer is deforming because its so thin. Has anyone used either the Precision Armament accu-washer system or something like the AAC shim kit?

I throw the peel washers away and use the Precision Armament system. Much easier to work with.
You say 338 shim set and are referencing 5/8x24 thread pattern shim sets. If your barrel had 18x1 or 1.5 threads or alike you need the 338 shim set from AAC. If you in fact have 5/8x24 threads then both you mentioned are good to go.
Brownells also sells a package of varied thickness shims for a small amount of money that work fine. Just mix and match what you need. I've used my set for two brakes and it will probably work for one or two more.
I never use the peel washers. They always cause me grief. I have a bunch of extras from the 51T's and other mounts over the years that use color coded shims. I just stack them in there until it's good to go.
I bet an old feeler gauge (one past it's prime maybe) would be excellent for measuring how many of what size shims you'd need, though I've never tried it yet.

I have 338LM savage with 5/8 x 24 tpi. Put on a Area 419 sidewinder self-timing brake. Works great
I bought a spacer kit from Brownells and they worked fine. That said, I was disappointed in the lack of surface area. They leave a gap and I had to slide a thinner washer in to hold it up/ centered while I tightened.
