Think of a few things:

vitamins

high calorie light weight foods-Freeze dried meals will not provide the calories you need on an extended trip. Think nuts, couscous, power bars, oatmeal.

An additive for your drinking water. I once went on a week long fly in Dall Sheep hunt... Made the mistake of taking only orange Gatorade..Take lemonade, Gatorade, and several others. Limit caffeine in take.

Take on small item of your favorite food. About three days into the trip.. a small can of mandarin oranges can taste like heaven..

Hard candy like lemon drops are nice to keep your mouth moist.

Beef Jerky! Cliff Bars are good too.

Mountain House I can take it or leave it, for me only real plus is its convenience.

The mandarin oranges however are an amazing break from the bordom of trail food. I like them in the larger plastic bottle, as you can reseal it and get a few servings from it.

Nuts, jerky, a bag of tuna, with a flat bread like a pita, and cheese (wax wrapped).

a) which area? will there be wood available or do you have to bring fuel/gas on your own? (in my area hunting area at about 2k to 2.5km above sea, there is nothing to put on fire)

b) does it have to be warm or can you do with cold meals for a week?

c) will there be a camp or will you be constantly on the move from one location to the next?

without that info, there is little advice i'd be able to give you.

in general:

for my hikes on iceland i like to take 'trail mix' (if that's the correct word) with me. you tend to burn alot of energy and nuts give that back. also they can stand some humidity, fill the stomach, etc.

get some chocolate or similar for blood sugar. especially when you have females with you (and they just are half-grumpy as mine when they are low on sugar)

noodles and similar are worth alot. but only consider them when you have sufficient access to water.

soups - no weight. easy to make. use the spare hot water on tea, store in the thermos. there is nothing like hot tea/soup on a cold, rainy day

When I was still hiking into remote areas to hunt, I would always bring along at least 1 Mountain House dinner(the "serves 2 ones) for every day I was planning to be there plus at least 1 more just in case. I also liked to eat their scrambled egg breakfast too.(the "no cooking" ones) for a hot meal quick in the morning. For lunches, I'd bring some jerky, trail mix with mostly nuts, & very few raisins, etc.(I hated to have the sticky sugary residue on my fingers when water was hard to come by.) Ritz crackers, & some cheese is good too. A few Snickers bars too if it wasn't going to be too hot. I had to use a pack stove for heating water, & the nearest water was about a mile, & 1500' below my spike camp, which was about 7000', & I hunted mostly about 8000'. Those were good times. All alone for 10 days in the wilderness...Dangit! Now I'm bummed. Getting old sux!

I put this sort of thing together with my vacuum sealer, all I need is a canteen cup and some heat. Two per day will sustain a man, even one in emergency situations....but three is nicer.

Dried soup or raman noodles, a granola bar, a chocolate bar, two multi vitamins, a propel drink mix packet, and a bottle of water in each one. "Breakfast" ones have a pack of oatmeal instead of soup. There's enough water in the bottle if need be to make the soup/oatmeal and still have a drink with it. Doesn't weigh much and doesn't cost much if items are purchased on the cheap. Makes a decent hot bush meal with a couple goodies extra.

Sounds like Mountain house with some snacks in between is the way to go.

I'll be at about 8000' and camp will probably be moving around. I'll have propane fuel so I don't have to worry about getting a fire together after hiking all day.

I take instant oatmeal for breakfast, several granola bars and jerkey for snacks throught the day, and a mountain house per day for my dinner. Most important piece of gear is a good water filter that can fill your camel bak relatively easily and the jet boil is awesome if you have room. I want one but still use my pepsi can stove until I upgrade.

I also eat a couple handfuls of slamon berries and blueberries every day, alpine blueberries kick ass in the morning oatmeal.

Look at what REI and other backpacking stores have. You can supplement many of Mountain House meals with more noodles, etc, from a regular store. A four person MH meal really only serves two hungry persons.

Make yourself a hobo stove. Google it. I would also recommend "meal replacement" bars. Some can have upwards of 700 calories, 30g of protein, and 100% of daily vitamins. Plus they taste awesome and all the protein makes you feel full, especially if youn drink some water with it. I would also recommend a Katadyn pocket water filter

If you're going from Dallas to 8k ASL, you oughta take some oxygen too!!
