Everybody is using the carbon fiber tripod most of the time because it is light but isn't having a heavier tripod better for stability ? Lets take out of the equation that you would have to hump it around all day would you still choose the lighter tripod ?

I think the stability of the tripod is a bigger factor than the weight. You can have a light carbon fiber tripod that is very stable or a heavy tripod that has wobble from loose or poorly fitted joints. It’s not all in light versus heavy.

Also, many tripods will have a hook on the bottom. You use that hook to hang your gear bag from. Now a light tripod has become heavy.

I have a heavier aluminum tripod, I've shot from ultralight RRS tripods. I feel like they were both equally stable, especially sitting with the legs spread wide. As above, I think it's more about the quality of the tripod than the weight.
