My Dad has had 3 .275 Wby's and he likes them a lot, He shoots groups around 1.25" or bigger and that is good enough for him for hunting. I have shot his rifles several times and I am glad I went with the .30 cals , 308, 300WSM The bullet selection is a big downside to the .257
You said it right "too little for the big stuff. And too big for the little stuff". When I shoot small critters I go with 22250 and bigger critters .308 ,300WSM and even .338RUM.
I may try a 25WSSM some day but it is way low on my gun list.
