So, my rifle shoots a half mil (50mm) high at 100m when I take the brake off. If I were to shoot at 500m, would it still be half a mil high (250mm), or 50mm high?
I hope to be able to take the brake off to go hunting and use the same dope...?

If POI shifts 50 mm up at 100 meters, it will most definitely NOT be 50 mm high at 500 meters.

Why don't you run a free online ballistics simulation and see what happens with your actual load?
 
He also asked if it would still be half mil high at 500 meters. Theoretically, yes. His zero changed from 100m to approx. 200m.
 
This situation is what the zero offset is for in your ballistics program. If Your POI is high relative to you POA, use positive numbers. If your POI is low relative to your POA, use a negative number. Your elevations will be adjusted accordingly as seen by looking at your 100 yard zero which will be down elevation of 0.5 MIL if using 1.80 for your offset.
