I have heard about MTC turrets, and locking turrets and a bunch of different turret styles they offer. Their website has zero info on the turret options.

Is there somewhere I can learn about the options or can someone school me?

The MTC turrets are the ones you will find on a USMC spec 3-12x50 and now on the 5-25x56. They are the taller ones with all white writing and they feature the "more tactile clicks" meaning every mil has a more solid click to communicate to the shooter how many mils he has dialed without having to come off the glass. They also have a ring on the topthat sits flush, but will pop half way up in between your first and second revolution, and will pop all the way when you enter your second revolution so you don't get lost in your adjustments. The standard turrets are the ones with yellow writing, and their clicks are the same throughout all adjustments. They feature a window that will tell you what revolution they are on. The 4-16x scope has shorter knobs and I believe they are a single turn system. The new locking turrets are only on the new 5-25x scopes and the only difference between them and the standard turrets are the new locking ring that just basically stops the turret from making undesirable adjustments in case you throw it into the grand canyon or have to use it as a blunt weapon.

(I'm not sure if they are MTC or not) All turrets feature a zero stop and the 3-12 and 5-25 are double turn. If you use google you can find pictures of the different turrets and can read my short simple explanation to get a better understanding, but I'm sure someone will chime in with better information and possible pictures.
