Maggie’s Souvlaki, Greece's natural super-food

Re: Souvlaki, Greece's natural super-food

Souvlaki is outstanding.

Note,

QQ needs to stop in Tarpon springs to get a Souvlaki ths week!

Sorry was distracted by the prospect of fine greek food!

Where you from Remoah? Victor would ask you to fill out your profile.

Re: Souvlaki, Greece's natural super-food

Let's see, I'll be in Clearwater in the morning until around 11:30...Need to make my way to Brookesville by 1:00 and it just so happens that Tarpon Springs is conveniently located along the way up U.S 19...

I'll stop in at Pappas's and buy two and a large Diet Coke!

Gyros are for tourists!

Re: Souvlaki, Greece's natural super-food

Haha. I swear i filled the thing out.
Melbourne, Australia. Fraknston to be specific, but i wouldnt go too much into that.

Pre sure Gyros is the meat... maybe it's one of those discrepencies in food naming between Aust and the rest of the world.

I'm pretty sure Greeks make the best food. Theres a place across the road from the local pub that does the best souvlaki, especially when you've had more than a few too many. Hits the spot.

I grew up (In a mixed family Armenian and Lebanese) in a town with a lot of Greek people and we used to argue about who invented what in the eastern Med! All in good fun, mostly!

Perhaps some of our Greek members can correct me but Gyros are generally made from the meat-loaf like cone which may or may not be Lamb based, whereas Souvlaki is made from actual lamb meat.

The Gyro is also quite good and usually cheaper. I think of it as a large Greek sausage! (Fuck off CKA!)

Re: Souvlaki, Greece's natural super-food

Hmmm.
Not sure but im fairly sure Gyros down here is just the meat, whilst the Souvlaki is the combination of Meat+Bread+Tasty Fillings.

Probably depends on area. Down here we call Potato Cakes a Potato Cake and those heretics up in NSW called them 'Potato Scallops' or something like that.

But i've never ordered a Gyros, i will soon, and check. Maybe it is the meat-loafy stuff.

Then again, you should see what some people here call pizza...

Re: Souvlaki, Greece's natural super-food

Yep, it's pie, and nobody up here in the Southern Tier knows what it's <span style="font-style: italic">supposed</span> to be like. We just got an NJ refugee here in Dundee (<span style="font-style: italic">Godfather's</span>), and they make a decent slice.

Re: Souvlaki, Greece's natural super-food

Here is my souvlaki recipe given to me by a Greek friend. You can use any tender meat, chicken, beef, pork or lamb

Ingredients
1 lemon, juiced
1/4 cup olive oil
1/4 cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
4 pounds pork tenderloin, cut into 1 inch cubes
2 medium yellow onions, cut into 1 inch pieces
2 green bell peppers, cut into 1 inch pieces
skewers
Directions
1.In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
2.Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
3.Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

Put in a pita and you have a meal for on the go

Yiota, my friend also make her own gyros meat. Tastes as good at the rolled, pressed meat in the restaurants.

Ingredients:
•Meat Mixture:
•1 lb. ground lamb (or beef)
•1/4 cup minced red onion
•2 cloves garlic, minced
•2 tsp. salt
•1 tsp. black pepper
•1 1/2 tsp. cumin
•1/4 tsp. nutmeg
•1 tsp. dried oregano
•2 tsp. fresh lemon juice
•Sandwich:
•4 rounds of flat bread or pita.
•lettuce
•tomato; sliced
•Tzatziki Sauce
Preparation:
Meat mixture
1. Thoroughly combine all ingredients in a bowl.

2. Divide into four equal portions and shape into oblong patties about 3" wide, 6" long, 1/2" thick. Refrigerate for an hour.

Sandwich
3. Grill patties over a hot fire for 3 - 4 minutes per side.

4. Spread tzatziki sauce down the center of a flat bread round, add a lettuce leaf, add some diced tomato. Add the patty, fold the bread over the lamb, and enjoy

I guess I should also give you a recipe for the Tsatziki sauce:

Ingredients:
•1 cup plain yogurt (if you can find the extra-thick Greek yogurt it's best)
•4 garlic cloves; roasted and finely chopped (see below)
•1/2 lemon; juiced
•2 tsp. finely chopped mint
•1/4 cup finely chopped cucumber without seeds
•Salt to taste
Preparation:
1. Place whole, un-peeled garlic gloves in a small, un-oiled skillet over medium low heat and cook for about two minutes per side - until lightly browned. Peel and chop finely.

2. Combine all ingredients in a small bowl.

Enjoy. Get a bottle of Retsina and sit down for some fantastic food.

Re: Souvlaki, Greece's natural super-food

RJW's recipe looks good as sin. I need to find some goat meat, and barring that lamb or pork and see what I can do with this.
A good friend of ours introduced us to Tzaziki about nine years ago. After finding it didn't have quite enough garlic we decided the perfect amount was somewhere around four heads. Just picture a metal bowl that holds about a half gallon or so, and a grill full of kebabs with lamb and pork and lots of beer.
We miss James and Ilona like mofo's. Great neighbors only come around once in a lifetime it seems.

Excellent recipes RJW, making me hungry. I think lamb will be the ticket as we just had 'Arabic' Pork chops last night. Used the basic Corriander, Pepper, Garlic, Cardomum, and Cumin which is found in many a goat stew in Arabic cooking and applied it to pork chops for the grill with a little Isreali cous cous

Re: Souvlaki, Greece's natural super-food

Always glad to taste test...Every Greek I know has their own way of doing a recipe...so far everyone I have ever had is really good.

Does Ma ship?

I also copied RJW's recipes as they seem to have a little more "soul" than the generic "Cook book" varieties.

What an interesting thread!

Re: Souvlaki, Greece's natural super-food

The recipes belong to our friend Yiota. Little lady from Greece who cooks a lamb on a spit every year for Greek Easter, in her back yard. Everything she makes is outstanding. You are right that the recipes have a little more soul and they have Yiota's love and heart in them.

Re: Souvlaki, Greece's natural super-food

Like all the rest of my 'culteral' based recipes, everyone that I have is from someone who is from there and cooks food as it should be. If you want to learn to cook Korean, go to Korea or find some Koreans to teach you, same goes for Thai, Vietnamese, Chinese, Japanese, Mexican, Italian, German, French, or any other culteral food. The Tzaziki and SOuvlaki recipes we and our friends have came from a greek lady who was a Soldier's wife. We of course have adjusted garlic a bit in the Tzaziki. Same goes for the Pomegranite Garlic Leg of Lamb recipe we have for slow grillin.

As always, if you are going to cook, do it with the love of the food and with the respect for the culture it comes from so it is as authentic as possible. That 'Chinese Food' you had the other day, it ain't Chinese, it's been Americanized for your tastes by the Chinese people who served it to you from way back in the 30's. Chances are that most of those dishes are even American Chinese invented just for YOU(well your grandfather). You want authentic CHinese food, go to China town and find the smallest hole in the wall and sit down and ask for something to eat. Same goes for everything else

Re: Souvlaki, Greece's natural super-food

Lamb always reminded me of venison. Lamb isn’t very available around me and when it is it’s pricey. Venison is in the freezer. Venison Souvlaki! Venison from the backyard, tomatoes from the backyard, it doesn’t get much better.
