I usually wait until the first regular season Colts game but with the temps barely breaking 70* today and nothing else lined up I decided it was a perfect day for chilli.
1lb Chorizo sausage
2lbs Ground chuck
1 Large yellow onion
2 Small jalapeno peppers
3 Large cans of diced tomatoes
2 Small cans tomato paste
1 can of chilli beans
Plenty of chilli powder
1st step is to brown the Chorizo. While that's going I chop up the onion.
Once the Chorizo is cooked and has turned a bit darker I toss in the onion and let that simmer for about 5 minutes.
Then the two pounds of ground chuck get mixed in along with a healthy dose of chilli powder.
While the chuck is cooking I prepare the jalapeno peppers. I use them for flavor rather than heat since some in my household can't take it too spicy.
Once the chuck is cooked through I add the diced tomatoes, tomato paste and the beans and mix it all up.
Top that off with another healthy dose of chilli powder and the jalapenos, stir and let it simmer for a few hours.
Serve with shredded cheese, sour cream and hot out of the oven cornbread. Gonna be a good dinner, just wish I had some NFL to watch while I eat it.
