Tis the season.....for Chilli!

I usually wait until the first regular season Colts game but with the temps barely breaking 70* today and nothing else lined up I decided it was a perfect day for chilli.

1lb Chorizo sausage
2lbs Ground chuck
1 Large yellow onion
2 Small jalapeno peppers
3 Large cans of diced tomatoes
2 Small cans tomato paste
1 can of chilli beans
Plenty of chilli powder

1st step is to brown the Chorizo. While that's going I chop up the onion.

Once the Chorizo is cooked and has turned a bit darker I toss in the onion and let that simmer for about 5 minutes.

Then the two pounds of ground chuck get mixed in along with a healthy dose of chilli powder.

While the chuck is cooking I prepare the jalapeno peppers. I use them for flavor rather than heat since some in my household can't take it too spicy.

Once the chuck is cooked through I add the diced tomatoes, tomato paste and the beans and mix it all up.

Top that off with another healthy dose of chilli powder and the jalapenos, stir and let it simmer for a few hours.

Serve with shredded cheese, sour cream and hot out of the oven cornbread. Gonna be a good dinner, just wish I had some NFL to watch while I eat it.

Yours clearly isn't the former. Do you buy it ground, like the beef?

It comes in two 1/2lb tubes per package. It's ground but much finer than ground beef. Comes out of the package like a paste but cooks up similar to ground beef. My wife bought some of the cured stuff about a year ago and we didn't care for it but it may have just been a funky brand or something.

Well, my six year old daughter who rarely ever cleans a plate had two bowls and only refrained from a third because her Mother told her it would make her sick when they went for their evening walk. It turned out pretty good!

For those who cannot find chorizo, make your own.

Ingredients
2 pounds ground beef
1 pound ground pork
3/4 cup chili powder
3/4 teaspoon dried oregano
3 cloves garlic, minced
2 teaspoons salt
3/4 cup dry red wine
1/4 cup white vinegar
Directions
1.In a large bowl, mix together the ground beef, ground pork, chili powder, oregano, garlic, salt, red wine and vinegar. I find that using my hands works the best. Cover, and refrigerate for 2 to 3 days. Take out daily, and mix thoroughly.
2.If you are not going to cook with it immediately, divide it into 1 to 2 pound portions, and store in freezer bags in the freezer.

The secret is letting it sit in the frig. You can leave it for up to 4 days and it just gets better.

My chili recipe:

1 lb ground bison meat
1 whole stewing onion- minced
1 can kidney beans
1 can black beans
1 can Rotel diced tomatoes and chili's
1 small can rotel tomatoe sauce
1 bottle Sam Adams (I use regular, but to each their own.)
Chili powder- to taste
4 large jalepeno/serano peppers
1/2-3/4 bulb of fresh garlic- minced
1 can tomatillos
Adobe sauce for smokey flavor.

Toss it all in the crock pot overnight on low. Enjoy in the morning.

I used a can of Chipotle peppers, not knowing, while the adobe sauce added a lot of flavor, that they used habanero peppers, in addition to the jalapeno peppers, I was unable to enjoy that pot.
