what video cameras are you guys using to film out to 1200 yards

For the budget minded, GoPros (or similar) on tripods are pretty popular. Most of the time at those extended ranges, they have one set up downrange pointed at the target and one pointed at the shooter. You can honestly use pretty much any digital video camera for that dual camera approach, I've even seen iPhones being used.

If you're asking about the cameras that can zoom in at those distances with reasonable clarity, you aren't going to pick one of those up on a budget...

I use the Target Vision (2 mile version) however its not cheap. The shorter range versions are not too bad however. I've been very happy with the unit. It's been very reliable, hd picture & many usevul features.

i have seen videos of people shooting over 1000yds. wondering what cameras are being used.? we have a 900yd range, dont want to spend alot
I run a Phone Skope adapter on my iphone for my spottng scope and it works out to 1 mile just fine (probably further, just haven't tried it). It picks up the hits at 800 and 1000 decently (its a 300 win, so its a good "thunk", but at the 1 mile, I can barely hear it with active ears so that's a tough one.)
