I assume you're wanting one of the Eberlestock packs with the integrated scabbards? With this in mind, when you're talking "light weight carbine" do you mean an AR type platform or a lever action/bolt action? Here's my opinion based on the two options:
--AR platform: original Gunslinger, Gunslinger II, or Phantom. The scabbard is wider and will accomodate the wider cross section of an AR, even with optics. The actual pack capacity (main internal bay, not including the scabbard area) with these packs is well suited for 2-3 days worth of gear and can be easily compressed if you want to use them as a daypack.
--Lever/Bolt action: the same options above but you can add the X1A1, X1 Euro, and J34 Just One packs. The scabbards are more narrow & won't adequately accomodate AR platforms but are great for standard bolt rifles with optics or lever rifles with open sights. The capacity of the X1A1 & X1 Euro is perfectly suited as a daypack but might not carry 2 days worth of gear (don't know what kind of hunting/usage you'll be doing). The J34 Just One will easily carry your gear but the scabbard is too narrow for AR type rifles.

In the end, what you'll need to ask yourself is exactly what do you need the pack to do & select based on you needs. Eberlestock makes versitile but in some cases very mission specific packs. Packs like the Gunslinger II can be perfect for numerous applications, from 2-3 day remote hunting haulers to range packs. Then you have their Skycrane II which is way too large for use as a range pack & isn't designed with an integrated scabbard. Determine what you need the pack to do first then select based on fulfulling those needs...

Are the scabbards on the X1 big enough to accomodate large bolt action with big optics?

I have an AI with a large 56mm objective scope... but after a pack that doesnt make me look like im on tour

If not which model?

I've been wondering the same thing. I saw one at Bob Wards the other day and thought, "Cool pack. My rifle will NEVER fit in that!".

The X1 will probably not be the rifle for you then, I had an X1 for a little while and it was a struggle to get my rifle in the scabbard. At the time I was running a Remington 700 in a McMillan A4 with a Nightforce 3.5-15X50 F1 and with the Harris bipod I had to wiggle and shimmy that pack to get it to go in. My other rifle was in a B&C Light Tactical and it went in just fine but it didn't seem to like the bulkier stocks. I makes sense though because my understanding is that the X1 was more or less a hunting pack and not a dyed in the wool tactical pack. That being said I loved the X1's layout but after having the Gunslinger II for over a year now I'm over it...to me the GSII is a perfect all around pack for short trips and tactical matches.

GSI or GSII. I have a Gunslinger and it fits a 26" 700 in an McMA5 with a USO 5-25 TPal, 10rd AICS mag and harris swivel bipod.

I think my buddies GSII has better layout as far as the main pack, but they both kick ass. The actual pack on my GS05 (GSI) isn't bigger than a SpecOps "The Pack" or any other "3day" pack.

I have a Vortex Razor on my Tikka with a Manner's T4 and the Harris swivel. The Razor is HUGE. Would it fit in either of those, or is one more forgiving than the other?

Either Gunslinger pack should be able to handle that set up since the scabbard is as wide as the pack. The bottom of the Gunslinger II's scabbard is wider so that rifles can be carried buttstock down or up a little easier but other than that the scabbards are pretty much the same.
