Looking for a nice 30 or 34mm tube hunting optic for my 6 creed. 15+ on the top end and would like to keep it sub $1,000 unless it's a good deal on an AMG or you take partial trades. Mil preferred but since it's hunting I might consider MOA too.

imho - sub-$1000 becomes the primary constraint. At that price I'd go with a NEW Vortex PST Gen2. Given you mention MIL and MOA you might be wanting some precise holdover capability. I prefer the EBR-7c Christmas tree reticle, but understand hunters might prefer standard crosshairs for clearer glassing view. just my 2 cents.
I have a Leupold VX patrol in 4-12x with mil standard crosshairs that I like. And its light for hunting.

I have a Meopta scope that is co-branded by Cabelas that is really great, but it's only 3-9x and you say you're going to 500 yards... I'd want a 14 or 15 power for that personally. Just so I can zoom in on an intended target enough to see if it's really what I want to shoot at... ya know?

Also, you may have never heard of Noblex-Docter but they're great. DVOR has some of the N5s for a fair European optics price.
