This week I purchased a used 7-35 ATACR and plan on zeroing the rifle next week. While mounting the scope on the rifle today we went to boresight it using some sort of device that connects to the end of the barrel and shows a grid through the scope. Long story short I will likely need to dial down past the already set zero stop to zero the rifle.

I found some videos on how to set the zero stop and from what I watched I believe I would just have to loosen the top clutch before zero. Is this correct? I want to get good info before I start messing around with my scope.

It sounds like you have the basic idea. After removing the elevation turret, loosen the tiny clutch screws 1 to 2 turns. Then manually back off the top clutch plate counter-clockwise a couple turns. Then snug the clutch screws in an alternating pattern, like you would do when tightening the lug nuts on a car wheel. Don't apply much torque to those little screws. Replace the elevation turret and you should now be able to adjust it down some mote.
