Id say no different at all, but the guys who run shorty barrels tend towards the faster side. Either will work.
Even a 1-12 is fine with 168s and 99% of the time, good with 175s as well.
1-11 seems the ideal twist rate for 175s and is good for all but the heaviest/longest bullets that are practical for use with a .308.
I just had a Rem 700 in .308 re-barreled with a Bartlein 1-10 5R - they had it in stock in the contour I was looking for. I would have been just fine with a 1-11.
FWIW, Berger recommends a 1-10.5 for their 185 Hybrids and closer to 1-10 for most of their heavier bullets;

FWIW, I ran some 185 Juggs out of my 20" 12-twist .308. While I can't claim that bullet spin/BC was optimized (I have no way to confirm this), I can at least say that the projectiles made clean, round holes in paper at 100 yards.

I have always had extremely good luck with 1-10 even down to 168. I think the 1-10 gives you more options if you want to experiment with heavier bullets!
As stated it really depends on application. I generally steer toward the 1:10 for versatility especially with shorter barrels. 1:11 shoots great also with a wide range of bullets and can offer a very slight increase in velocity over a 1:10 twist. And for a rifle designated to 168's a 1:12 is nearly unbeatable for accuracy. I have had a few 1:12's struggle to get 175's in less than .75moa but with 168's or less they generally produce phenomenal accuracy. And again a very slight but measurable increase in velocity over the slightly faster twist barrels.
