Mapping Trophy Bucks is one that comes to mind

It might depend on where you hunt but Rattling, Calling and Decoying Whitetails by Gary Clancy is pretty good.

QDMA puts out some good info on how to manage herds for your area and goals. Tips on nutrition, browse, food plots, minerals, fertilizing natural vegetation, prescribed burning, doe management, age class management for bucks etc.

Quality Deer Management Association

I own the first two books and have been a QDM member for years and have been to a lot of meetings and there is a lot of good info available from them.

Another one I wouldn't mind having is by Terry and Mark Drury with Michael Hanback. These guys may have it made but they do know a lot about Whitetails.

Well from what I have seen, rattling, decoying and calling does work around here but not as well as it may seem on TV. There have been times when decoying has screwed me and times when not having a decoy hurt also. The Southeast is a tough place to hunt big bucks compared to the Midwest from what I have read and seen. A lot of the pros say the SE Whitetail Buck should be considered its own subspecies like the Blacktail because of how tough it can be to hunt the mature ones. Mainly due to high hunting pressure and almost every home having at least one hunter in it (even if they are no good)

Just don't get frustrated when you don't always see action like you do on the big shows. In most cases they pay to hunt the best managed and or least pressured deer in America. Some TV shows even bid on deer captured on Outfitters cameras (from what I have heard recently). The hunt goes to the highest bidder.

I recommend the Drury books and videos because love them or hate em, they grow their own and know how to do it. They are good about explaining what they are doing and why.

This is a great book for learning about aging bucks on the hoof. Really nice pictures and lots of examples of the same deer aging from year, giving you a good idea of what to watch for. Probably the best book I have on my shelf.

Hunting Whitetails Successfully is an oldie but goodie. My dad's an avid bowhunter and many of the things he's taught me about deer behavior and how to find a hot spot come from this book.

A good book if you start to get into land management, not only for deer but wildlife in general. Forage diversity is key and a book like this will help break you of the "food plot" myopia.

Another handy book if you decide to start practicing management principles like hinge cuts and selective thinning. Knowing what you're cutting is a big help. "Trees of the Southeastern United States" by Duncan and Duncan is also a great tree id book.
