Cajun Seasoning

I had a transaction here on the hide a few months ago which involved some trading with member Cajun Blake. He offered a combo of cash and some items which are difficult to find in Indiana. He also offered some cajun seasoning of his design which turned out to be fantastic. I've used it as a dry rub on chicken, ribs and pork shoulder and it is awesome. I'm a big fan if cajun food and have tried many different types but his is a bit different. Most cajun seasonings use cayenne pepper for heat but Blake's uses chipotle and it really sets it apart.

Blake told me at the time that he was in the process of bringing it to the commercial market and he has recently accomplished that mission. It is now available and I highly recommend it. You can purchase it from his website at http://www.raginblaze.com/

I've met a lot of great men on this forum and I like to support/help them out when I can. That's the only reason I'm posting this, I have no association with the product other than being a new loyal customer.

I got my original Cajun recipe, aka 'Essence' direct from Emeril at Sam Choy's in Hawaii when we lived there and Sam was only 6 months old. His first word wasn't Ma, or Da, but, "Bam!"
Panty 6's cousin Reena was the Hostess at Sam Choy's, calls me up to tell me Emeril is there 'Right now!'. I grab Sam, into the front pack carrier, back pack bag with required needs, and haul ass down the street to Sam Choys. We get there and she lets us in. As I round the corner trying to be discreet it starts. Sam, in his loudest voice, goes,"BAM! BAM! BAM!" "Da da, BAM!" Emeril and Sam look up, and as I say Sam, quiet, he looks at me, keeps saying it, and both chef's just smile and welcome me.
That day was one I will never forget. I met not one, but two of the Chef's who were my inspiration to do food justice.
Emeril gave me the recipe for the Essence(this was before it was available on the shelf everywhere) and Sam Choy gave me a few recipes for some of his stuff, then invited me and the rest of my small family back for dinner that night!
If it hadn't been for Panty 6's cousin it would have never happened! Little Sam made it one hell of a day to remember.
I always wonder where I would have ended up had I hooked up with one of the cousins I met before I met Panty 6. Since we all hung out at the beach surfing it could have easily happened. Funny how things work out, and man, those wahines still have looks that kill!


Beef Tri Tip on the grill tonight! I may try something different and add a little spice to it. Or maybe do it up with some of Sam Choy's Teriyaki and a little of his Hawaiian Ranch.

Or maybe some Cajun Spice and a little Cajun Butter on top!

thanks for the kind words brother, I greatly appreciate it and glad you like the Ragin Blaze. I've been working on this blend for 2 yrs and believe I have the perfect combination which sets my seasoning apart from others.

Ragin Blaze has no MSG and Low Sodium (135mg) whereas other well known brands have 310 mg and 350 mg. It can be used on fish, pork, beef , eggs, potato salad, steamed vegetables, etc.....

Damn, now I have that taste for the Cafe du Monde' coffee and beignets....can do it without the trip. Now if someonce could come up with an olive salad like the corner grocery and the fixins for their muffaleta....

Looks like I need to get my crawfish traps out and try the boil as well. Indiana redneck farmer crawdads.

any seafood could be substituted ... crab, shrimp, lobster, etc... (if lobster, dice it into small peices)

here is my recipe ..... also watch the video below

Servings: 4 servings
Prep: 15 mins
Total: 45 mins

<span style="font-weight: bold">Ingredients</span>
4 fillets catfish ( redfish or trout also works well )
4 tablespoons blackening spice
3 tablespoons vegetable oil
2 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 tablespoons chopped garlic
1 teaspoon Ragin Blaze Cajun Seasoning
1/2 teaspoon ground black pepper
1/2 cup diced Tasso sausage
3 cups heavy cream
1 16-ounce package crawfish tail meat, rinsed and drained
Garnish: chopped tomatoes and chopped fresh basil


Directions
1. Place fillets in a shallow bowl. Generously coat both sides with blackening spice.
2. In a large, nonstick skillet, heat oil over medium heat. Gently place fillets in skillet and cook for 2 to 4 minutes per side, or until fillets flake easily with a fork. Transfer fillets to plates and keep warm.
3. Wipe skillet clean with a paper towel. Return skillet to medium heat. Melt butter in skillet. Add onion, bell pepper, and garlic. Cook for 8 to 10 minutes, or until tender. Add salt, pepper, tasso, and heavy cream; reduce heat to medium low. Continue to cook, whisking often, for 5 to 8 minutes, or until sauce has thickened. Stir in crawfish meat; cook until heated through.
4. Evenly divide sauce among catfish fillets. Garnish with chopped tomatoes and chopped fresh basil, if desired.

Ive spent a few mornings sitting in cafe du monde eating beignet's and drinking chicory coffee with steamed milk while the sun came up and the street sweepers swept up the vomit and beer bottles! good times

Switch your right but I plan on it afterward. I can this weekend since its my bday weekend and I am NOT eating cake. Besides man I miss those flavors of home and I broke 210 today which is minus 46 pounds. I already have my Bookers ready for the weekend and I plan on cooking that catfish/crawfish recipe and some beignets....now what cigar do i need to accompany it??????

Dagsta , I travel the entire State of LA on business , and even work in East TX and the MS gulf coast. Right now my seasoning business is mainly mail order as I ship out of my house. Ragin Blaze products have been available for 2 months and I've already sold over 300 cans of the Cajun Seasoning. RB seasoning is LOW SODIUM (135 mg) whereas other brands have 310 - 350 mg of Sodium. The smoked Chipotle gives it an awesome flavor.

I'll gladly meet you or any other SH member anywhere along my travels to deliver the goods. Quite a few ppl have combined orders to save on shipping costs.

Hey Blake, Had the Cajun seasoning on porkchops last night...DAMN GOOD.
This is a great all around seasoning. Keeping it right by the stove.

The olive salad you sent looks great and tastes even better. Muffaleta for lunch today.

I can fix Chicken Lady some really spicey ones and I can tone mine down since I don't like a lot of spice on anything. Mostly garlic and a little TPete.

I'll be puttin an order for some of that coffee. Never had chickory coffee. I do like strong coffee though, spoon must stand up in the cup without touching the sides LOL.

That there "Finishing Butter" is something else I'd gotten from either here or somewhere else. Can't remember. When pulling a steak off the grill, to let it rest. Put on a pat of that, and tent it in foil.

Oh man... adds to dinner. Still looking to try the 'Blaze though. Will be ordering.

Thanks for helping our troops.

That little yellow shaker sits right by the stove and get used on a very regular basis. A good seasoning for just about anything. Great in soups and even on cooked veggies. Added some to ham an greenbeans and really boosted the flavor.

Just over an hour ago I had a big lunch with the wife, I'm suddenly hungry again!

I keep finding more and more guys on here that share two of my many passions, guns and food.

I was interested right off the bat when I read the chipotle instead of cayenne and was sold when I saw the low sodium content as most Cajun seasonings are very salty. Definitely going to have to order some of this Ragin Blaze!

Wow! I placed an order late Thursday and the spices were in my hands this morning! I thought I had ordered the Ragin Blaze but I goofed and ordered the chili mix so I just ordered the Ragin Blaze. Not a big deal cuz we love chili in my house. Getting ready to leave for a hunting trip on Wednesday so now I think I will make a big pot of chili to take along! I just got my can of ragin blaze in yesterday. This stuff is incredible and isn't to salty. I wonder why no one else uses the chipotle instead of the paprika. All of the seasonings with paprika taste the same +/- the salt content.

Blake, you need to get this on the shelves in new orleans!
