What on earth is the difference between the projectiles?

They have the same tip, same jacket and the same core material?

Why is one a hunting bullet and the other is a target bullet? The description on the Hornady site doesn’t make any sort of differentiation. On the ELDX page they talk about expansion but not on the ELDM.

I believe the thickness of the jackets is the diff.

but I’m open to being wrong on this.

Nope.

ELD-X has a thicker jacket with an interlock ring to help retain the core. ELD-M is like a really heavy varmint bullet with a thin jacket all around.

ETA: The ELD-M's will expand, but won't stop expanding unless you hit a narrow(er), slower, velocity window. Limited penetration, less likely to make a pretty little mushroom, etc. On the other hand, they cause massive tissue damage as long as you don't try to smash through bones. Pick your shots accordingly.
