When buying a new barrel for an AR from Krieger, should I have them chamber it for me or should I consider having an independent gunsmith do the work? You can send them your bolt and they will chamber and headspace it for $100. If I am looking to achieve the "ultimate" in accuracy, would I be better off having this work done by a smith with experience doing accuracy work on AR's?

I faced this same decision, and had Krieger do the work. Their work is widely considered to be almost flawless, and it removed an additional step of mailing to someone else and waiting for chambering from the process. I've never heard anyone complain about a chambering job, for either a bolt rifle or an AR, from Krieger.
