I think you have the basics right there (.243). Get the longest barrel you still can and call it a pistol in the state you are ai. Some states won't allow a 'pistol' with a longer barrel than 16". Some states won't allow that for hunting. Minnesota allows longer barreled pistols but not for hunting. At least Handgun hunting.
The other thing I would check around on is a brake and some sort of hand protection. Unless your brake is very effective, handguns with cartridges the size of the .243 give a lot of recoil.

Welcome to the world of LR pistol shooting. We've been competing here in Ohio at the 1000 yard matches going on three years now with ours and feel they are doing pretty good. I think a few are still surprised when we drag them out and start dinging the steel.
Strikers are the way to go being so easy to work on, ours are our old Silhouette pistols with an updated barrel and optics. I'm a bit old fashioned and kept both of ours more along the lines of what IHMSA classified as pistols but there are groups that are using what amounts to rifles without a shoulder stock.
It's more of what you feel you are wanting to build and your end goal is. I've felt that using a pistol puts at least some handicap on us by limiting ours to 15" and standard style stocks. We do use a bi-pod and old wooden wedges under the center grip. The first year I used various pistol scopes but finally upgraded to a Vortex Viper PST 4-16 just so I could see the smaller higher value targets better at the farther distances.
Both me and my son are shooting 260rem, the same as our rifles and are getting 2525fps. Not hot but the exact same load as our rifles so we can load all at the same time and still have exceptional accuracy. I know there are some LR "pistols" that were built for BR and compete with the rifles but they are very special purpose and are at the limit as to what can be called a pistol.
We've tried the Encores and found them to be lacking past 700 yards but some claim to get good accuracy at distance but that hasn't been the case for us. I've not had an MOA but they are supposed to be very accurate but we've never had one show up at our matches to see how they do. My buddy has a Striker in 260 and it shoots nearly identical groups to our XP-100 guns. His Striker and XP-100 are rear grip while ours are center grip style.
If you build a long barreled heavy stocked gun that is pretty much a rifle without a shoulder stock then you're really not creating much of a challenge other than not having to worry about a cheek weld and shoulder placement. I'm not really against those that stretch the limits on what is a pistol but I enjoy the challenge of taking a pretty much stock XP or Striker and learning to shoot it well given it's limitations.

Lots or variables in between to make a tool to do the job, just depends on what ya like and how you wish to approach the challenge.

It's a fun challenge and quite enjoyable. The more we shoot them the more it amazes us how well they shoot even on the smaller targets.
You didn't list where you are from but if you're close to OH you'd be more than welcome to join us at Rayners and we'd let you try them out firsthand on the long steel.
