The three lions carry over from William the Conqueror (most famously carried by Richard the Lionheart) and the Fleur-de-lis represents the connection to the French royal house of Valois.Valais.

On edit, I think it noteworthy that this mixing of the two houses and the inevitable claims to the throne of France by the different houses is what led to the Hundred Years War.
