Bone marrow and rocky mountain Oysters are the unsung heroes of the beef cow. The tongue is pretty fucking good too.
The tongue is like a super-soft pot roast. I was surprisingly amazed.

All set with the balls though. Tongue and heart were my limit. Lots of people seem to fuck the heart up when they cut it or cook it.

Tongues the best marbled piece on a cow. Tacos or sliced on a sandwich, yum.

I will say you can fuck up a tongue I've had it that was like eating rubber bands and had the tough outer layer on still.

Well we really aren't sheep country. Those goats escaped from their property and the owner got a ticket.

Everything that's not privately owned (and fenced off by that owner) is part of the rancher's open range cattle grazing.

Pretty awesome sight to see large herds being moved. Warms my heart. This was a major part of much of my life. Note the dogs on the left.

There are some truly massive herds in the Northern Rockies far beyond the view of most people that spend all their time in the high country. A few do shifts of 50 miles when they come down. The re-introduction of wolves and the return of the bears will have a profound effect on this way of life..

Many of the roads in the West and Central Plains followed Indian trade routes or migration routes. Likely this road followed one.

That being said, the damage some sheep herders did to the high sierras has never been recovered.

I run into herds quite a lot when out riding the dirt bike or shooting. There are 20k or so sheep based in the area, usually in small groups of 200 animals. Old world profession for sure.

This particular morning they stepped out onto the road at a choke point in a canyon thats several miles long. Looks like they merged a bunch of small herd for this move.

When I was in college someone asked me if I would try them. I said, sure if they were free. The next day a guy I worked with asked me if I wanted his extra ticket to the FFA bull fry. They were good as fuck. Kind of like tongue only softer, cut into slices a little less than 1/4" thick breaded and fried. They don't just bring you a soft ball sized testicle at least. That would be a little harder to eat. :ROFLMAO::ROFLMAO::ROFLMAO:

I did a some arm roasts for a big family gathering a couple weeks back. They came out great, It was lot like tongue. They are kind of like a brisket. The trick is to not cook all the fat and collagen out of them. Most people way over cook their meat.
