Fuel: CNG (methane) and liquid oxygen. The "clouds" you see coming off of the rocket through the entirety of fueling and launch is due to a combination of atmospheric condensation from the sides of the LOX tanks which are chilled to -100°F and specialized bleeder valves located at all sides of the tanks venting excess LOX to maintain optimum tank pressures in relation to the rapidly changing atmospheric pressure outside as the rocket gains altitude.
Correction: Methane is used for both stages of the Starship assembly.

What can I say, your grandma has expectations
I'm pretty sure its not running JP8 filtered or otherwise. The Falcon nine is but the starship runs Methane chilled to liquid and liquid oxygen. There is a lot less soot that way and it is a fuel that can be sourced on mars.
