Am I correct in my assumption that if I have a muzzle brake that is properly timed and I remove that barrel and then reinstall to the same torque, the brake should still be properly timed? Getting another barrel spun up for my Rem 700 that has a pinned lug and hoping I can keep the current brake that is on the .308 barrel as is and get another timed to the 6mm barrel I'm putting on instead of having to get a self-timing brake. Thanks!

Not u nless you take that brake off and send it to the Smith to be timed when the barrel is threaded. However, it's been my experience that once you have a brake timed on a barrel, it is best to leave it there. Just get another brake to keep on the other barrel, problem solved and probably the cheapest

Simple answer is yes. Having each barrel headspaced when at a particular torque, I have both of mine at 75 ft/lbs, and each brake timed when the barrel is headspaced will return the barrel/brake combination to the correct timing location. Even if you're a little off in your torquing I doubt you'd be off time more than a couple of degrees which would be hard to see with the naked eye.
