If you guys set a depth mic on your rail, in front of the ejection port, and measured down to the top of the stock, how much difference would you expect there to be from one side to the other?
 
Could be any number. Stocks (fiberglas/CF/ect) are not as square and parallel as you would thing. Take the barreled action out and put your level out on the tip of the forend. Move it to other locations and see what happens. Id bet its not gona be the same. Half to full bubble out wouldnt surprise me at all

How much difference does there have to be for it to be visible to you?

Are you a rifle builder?

Do you have a standard you use when doing an assembly?
 
It is going to be a different answer for different rifles based on the stock. If you are going to the level of using a depth mic, there is going to be variance in the stock itself most of the time from side to side if square. The only way to make it perfectly even in that case would be to actually glass the gun in at a slight angle tilted to the lower side; and that is clearly not ideal. I level the rifle to the stock, and with a decent stock I have never been able to see a difference that made me want to measure. Generally the issue comes from people not doing a thorough job on the prep work before they ever mix the epoxy. Every thing should be properly centered, leveled, cleared, etc and checked dry. In the case you are asking about, is the rifle level to the stock side to side but the stock is lower on one side or is the rifle canted in the stock?
