Yes you can but unless your 30-06 is shot out, or you plan to go to a heavier barrel or you want a throat & twist set up for some special bullet, the conversion is questionable. You'll never recover your money.
With the FN Police rifles in 308 (A model 70 action) being closed out at around $800, I'd sell the 06' and buy a ready to go "tactical" 308.

I was originaly going to do the same with mine. I decided aginst it, mainly cause I already started reloading for the 06. I have a good bit wrapped up in that specific caliber. The way I see it is if I want to get another caliber, I could just pick up a rifle chambered for it. I got the rifle for less than 400 so if I wanted to do a caliber change, new barrel+install I would be looking at the cost of a new rifle. I plan to just pick up a short action next time and go from there.

I realize it's not exactly what you're looking to do but why not shop around for a used savage 10 or 110 action/rifle and buy a factory take off barrel and spin it on yourself? You might be money ahead when all is said and done. Saves money on the smithing cost. I suppose a cost comparison would be your answer.

Why not just stick with the 30-06, it will do everything the .308 win will and more. Just because shes old, don't count her out at all. It will shoot just as well as a .308 and makes a 300wm look to the rear at times.
You can load her up or down, your choice. load books are for all 30-06s that were ever made. Your 700 Rem will stand way more that any load book prints, for the 30-06. I've a old 700 in 06 it will do anything I really need done, it's just not as Tacticool as a .308. Gun rags are in print to sell shit, not print the truth.
