I just picked up a new Surgeon 6.5mm and I thought I had it all figured out with rings, scope etc.
However, I am using Nightforce med ultralight rings and a NF 5.5-22X56 and there is
not much wiggle room between the scope and barrel in fact don't even think
I could get the caps on.

So I think I need some new rings. Question now is what would you all
suggest - some taller rings or go with a mag mount setup? I am a little new to
all this long range precision shooting so looking for pros/cons and some
guidance from the hide. I am leaning towards 1.265" Intermediate Height rings
(4 or 6 screw) so I can clear some scope caps etc. But there is also
the mag mount MagMount™ 1.375" but I think that might be to much mount.
Comments most welcome.

I'd leave it, can't get much better than that right there. If you want to put the bikini on there just notch it out.

My ring suggestion is American Rifle co if you want to switch though. Best you can get

I'd say for just starting off, you're doing a hell of a job! Have you actually got behind the rifle to see how comfortable it is with the scope at that height? You want it to feel natural and you shouldn't have to strain to look through the ocular lense. If it's too low, get slightly taller rings. If it works, then leave it.
