Re: South Texas Barbecue

It looks fantastic. So how much longer before it is done? A month or so? Keep the pictures coming.

Thanks! I'm not rushing them, but I would say probably by Friday or Saturday. I'll post the pics as he sends them!

Dime cuando llegas en el Valle wae! Cuando llegas ahora estas en el sur de Tejas. La parilla se mira muy chulita y Chingon!

Sorry couldn't help myself. LOL

Re: South Texas Barbecue

Rule of thumb is to never use pipe that has had petroleum products run through it. When I did my pit I picked out some flat plate and had it cold rolled so there was no chance of it ever being used for petro products. You can't wash that stuff out (it leeches into the pipe). That rust on the inside of your pipe makes me wonder...

Re: South Texas Barbecue

I picked the smoker up last Friday in rainy weather in Houston, but I had to pick it up. It's a pretty sweet smoker. I'm going to season her up hopefully tomorrow.

I just need to put some new rims and rubber on the smoker. Nothing too expensive for now. I had Donald make the smoker into a removable reverse flow smoker. It came out really nice.

Re: South Texas Barbecue

Mmmmmmmmmm, skinned whole Ms. Piggy! As my old Vietnamese friend 'Bobby' used to say,"I take cheeks an pushy, good soft meat" I'll leave the pushy to Bobby, but the cheeks are damn good...and yes, Bobby gave me some of his smoked pig when we worked together in Hawaii one time. After I said, hell yea, it's darn good, he smiles and says, "It Pig pushy! Best Part!" When I wanted to choke him for serving me pig pussy, he smiles and goes,"You eat girlfriend pushy, you eat wife pushy, pig pushy ok too!" The man did have a point, and the meat WAS meat, little more fat, little more flavor, who da thought? I guess barbeque is barbeque throughout the world
