Im wanting to get into the 6.5mm, Ive got a Savage PC 10 in a 308 and a Remmy 700 in a 270. I never shoot the 270 any more as it was my deer rifle and I just bow hunt now, and really dont shoot the PC much since I built a Mega MaTEN.

That being said Ive got a couple questions, which starting base should I start with for a 6.5 CM build? Also is it worth going to a chassis system or sticking with a McMillan or similar stock?

My quick two cents.
1. I cannot comment on 6.5 as I do not have experience with it. I am leaning towards having a .260 built.
2. With respect to chassis, I would say go with what works for you and not what looks nice. If you decide to change chassis I would recommend, though it maybe hard, to get behind chassis' you are considering. One guy at my local range purchased a McM A5 blind and did not like feel upon receiving. He has since purchased an AX 2014.

I would use a savage as it is a great platform to build from, the 6.5 Creedmore will also function well in the savage system. I have been using the 6.5 x 47 Lapua and love the cartridge. The Creedmore or the Lapua are both fantastic cartridges and you won't be disappointed with either one. By using the savage you can assemble the rifle on your own without the help of a gunsmith and should you decided at a later date that you would like to shoot the 308 cartridge again you simply screw off one tube and screw on the other and you're good to go. I also believe that a chassis is really the only way to go. There are several good chassis out there ours included, you just need to decide what options it is you're looking for and go with the chassis that meet your needs best. Here are a couple pictures of my Savage builds using the 7Finger chassis.

If I were you I would order a prefit barrel of your liking, I would go with 6.5 creedmoor but 260 would be good too. The prefit barrels are cheap and you can put them on at home. Slap that puppy in an XLR element and you will have a very fine startup rig.
