If you should decide on an easy meal for taking on the road, the following is one of my favorites.
Take the cheapest cut of pork that you can buy.
Crock pot it for 10 hours.
Shred into bowl.
Slice up desired amount of red potatoes into hashbrown type strips
Dice in onions to taste with a sprinkle of celery
Crisp in frying pan with oil until it potatoes are a golden brown.
Eat on corn tortillas with topping. My favorites are bbq sauce or salsa and sour cream.
This stuff will easily keep in the fridge for over a week.
