After reading the article that blklabs suggested, I finally understood what was I doing wrong. I also noticed that, because of my location (Denver), this Kestral unit will not let me input the Station Pressure reading. It will not allow me to input any pressure under 25.00 inHg. It seems like I am limited to using the corrected or Altimeter Setting.

Kestrel is supposed to output Station Pressure, not input it. If you know what it is beforehand, why spend money on a Kestrel - cheaper wind meters do exist.
It seems to me that you're not using Kestrel optimally. But then it's your money and your operation, have a blast at it.
