Lets assume my new Swarovski scope Z6 comes from the factory with the elevation crosshair centered and I want to start off by zeroing this scope at 100yd how many clicks up or down should I do initially

Don’t assume where the crosshairs are set from factory. Mount scope, bore sight, then zero. Otherwise you’ll probably just waste a bunch of ammo and get frustrated.
Yup.
If you start playing the guessing game, you’re going to make it more of a pain in the ass.
-Mount the scope and boresight at home.
-Put a clean target backer at 100yds and commence zeroing.
-If you don’t have a clean target backer then pop a target at 50yds with a clean zero target on it. Fire one round and dial to it. Then transition to a clean zero target at 100 and go about zeroing.
-Dont forget to set your zerostop (if applicable) and float your turrets/slip your rings/reset your turrets/whatever you want to call it after you’re dialed in. Only thing after that is zero confirmation post turret adjustment (to make sure you didn’t accidentally manipulate the turrets while floating).
Total round count to zero a new scope should be 9-12rds.

put a target at 25-30 yards

Yup. Good sized target at 25 yards with dot in middle, aim at dot and take one shot, use reticle as a ruler to tell you what to adjust to get you about 1" low at 25 yards and then take another shot. If there go to 100. If not then make one more adjustment and go to 100.

I usually put a target at 25, pull the bolt and line up the bore on the target. Dial the scope to just below the center of the target. Shoot target at 100, it's usually within a couple inches of a one inch dot. Dial the needed adjustment and you're done.

And you are done boresighting. You left out the last word. At 25 yards or so like @Rob01 stated, its better to have the bullet impact below the aiming point to keep you on paper at 100. If not you will be way high.

Except that part about dialing it just below center. :) As long as it's in the ballpark at 100 it is an easy adjustment and I'm usually done in three or four shots.
