Folks back home used to pay my brother and I to get them 'coons for T.giving. 'Coon is dark meat, I could see the similarity to bear (never tried it) possum looks more like white meat pork.

Coon is actually pretty damn tasty. Especially those that have been in my barn eating all the feed. Don’t be too quick to think they would be a crap meal, they really are good to eat.

Coon was comfort food for my dad. His father was a lifelong coon hunter and coon dog trainer. The hides were sold and the meat went in the pot. Dad was born in 1931 and grew up poor on a subsistence farm, nothing went to waste.
