Maggie’s THE "NOM NOM NOM" THREAD

Buisy day? Not much fresh in fridge.
We got your back.

1 can of chili no beans
1 can of red chili "enchilada" sauce.
Mix and heat till bubbling, done.

1 bag (dozen) of tamales, this time I had hatch green chillies and cheddar cheese, preferably steamed.

Garnish green onions and cilantro if you have it. Cheese cotija if available any really you like on Tex Mex.

None of this is a big mess or time consuming pita. You can spike it with any pepers you want I had salsa handy.

Stretch it with some plain rice works well.
 
I’ve been on a keto type diet combined with one meal a day for the last month. Down 22# and feeling fantastic.
Down side is missing some of your favorite decadent noms…..
Cured a craving for pizza with this keto friendly deep dish delight.

The crust is surprisingly good for being such a simple RECIPE. Instead of laying it out flat I formed it into the 10” cast iron pan that I browned the sausage in. Baked it a bit to make sure it was firmed up before adding fillings.
It contains provolone, parmesan, mozzarella, low carb pizza sauce, homemade mild venison Italian sausage, pepperoni, green pepper and green olives.

Should only be about 30g carbs for the entire pie…

Been laid up with bad back. Started to go out to a store and made it to my pickup truck and back went into spazm before I could get in.

So the "work" put into weight loss is creeping out by the minute.
No exercise the tv icebox and beer fridge are in a nearby triangle.

Boardem builds fat bodies.

Oh ya almost forgot the damn food channel, death by a thousand cuts.

Deviled eggs, had mine with paprika, olive, pimentos and hatch green chillies powder. Nice.

Smoked yesterday, oak, mesquite, and pecan pulled just short of done. Today put in oven to finish off and shellacked them.

Wife made potato salad.

Life is good.
 
A little thing about wood and a traditional side burner.

The quality of the wood will shine through. Any disturbance of wind heat cold rain changes things, pay attention and make adjustments.

My ribs get 60-70 % oak and a mix of pecan and a little mesquite.

Well I guess you can't call it a smoke ring if it goes all the way through. Lol

Sourdough. Started recently, moved to perfection, rapidly. Needless to say, I bought her all the proper tools of the trade. The sandwiches around here (which have always been superb) took a major step upward.

One of my go to easy and healthy lunches when working from home.

I like my food much spicier than the average gringo, so this was today's lunch. SPICY tuna salad.


Starts with Randy's Mustache on Fire pickles, because they're named after me and they're delicious. I'll cut up one or two depending on size, and two tablespoons of juice in my tuna mix.







Then Chosen food mayo, because none of us should be eating soybean oil.

I diced up a large pickle, and one of the peppers from the jar for extra spicy today.
