I have all my components for my Rem 700 243 rebarrel may take to gunsmith monday. The last time I talked to him, he said I could make up a dummy round and possibly order a different reamer for a longer throat if I want to. I'm putting an 8 twist barrel on it, so I would like to be able to shoot 105's. I don't have any 105's right now, but I do have berger 95's.
I still want to shoot 87 gr vmax as well, and want to stay within standard mag length OAL. This will be a hunting gun, and secondarily a recreational target shooter.

Should I have throat cut deeper than standard?
 
You can always do it later. If your gunsmmith needs a special reamer for the longer throat, tell him they make throating reamers for that.

I would like to stay with saami specs unless that won't work with 105's. I feel like that would still enable me to shoot 95-95 grainers well, and still possibly use factory ammo occasionally if needed. I don't have any experience, so any advice is appreciated.

That is what I have done for about 12-15 barrels and all have shot very well. Jim does outstanding work at a good price, with maybe the fastest turnaround time in the industry. I would drop my barrel and action off with him and usually get a call 22-23 hours later that it was ready to pick up. PM here ship it to him and be done with it, you will get the barrel done in short order.
