Shot a buck last sunday skinned and left to hang overnight in shed, Temp is 55 which is tad high to leave hanging in shed and i havent access to cooler so i quartered & bagged and have placed in fridge at 40 d, would leaving quarters in fridge for 4-5 days before de-boning and cutting into steaks be long enough to Tenderise meat, thanks.

Fridge i have is tad on small size and i havent room to stand quarters upright to drain blood, would it matter if meat is left flat on shelf with drained blood touching bottom of meat or should i drain blood from bags on daily basis untill i am ready to de-bone in a week or so, thanks ccoker.

Can also just use a cooler and ice, draining the water daily.
Our lease has a big walk in cooler that I utilize if I will be back out within 2 weeks.
I have two smaller hogs on ice in my big Yeti cooler from Saturday morning I will be deboning this evening
For hogs I go with 5 days max .

will probably invest in cooler and use water-ice meathod next time, Have heard getting as much air out of bag and draining blood on daily basis helps to prevent spoilage when using small fridge to age the meat.

I recommend against the cooler method. It is better that nothing but the best way would to hang in a fridge. Take the racks out and put your beer in the cooler.

I prefer the fridge method, my wife insists on the cooler method. Letting the meat dry and form a skin on the outside is the best. Fillet the dry "skin" give to dogs and enjoy the rest for yourself.

Just after wrapping quarters in cling film and gona leave in fridge at 38d till saturday before de-boning, fried up some of the back straps for eve supper, melt in the mouth stuff.

Doesn't matter whether it's deboned or not, it'll age in frig just fine. We debone it, wrap it or submerge in water and cover, and let sit a week to ten days depending on age of deer.

I hang my moose quarters for 10 to 14 days depending on temps and how big and stinky he was. If it stays in the 40's or cooler you should be good for a while. Keep smelling it. However, if it starts to get the funk going on it's time to get it in the freezer ASAP. If it's exposed to the air, remember to get ALL of the rind off before packaging. From what you described, you should be GTG.
