Crockpot roast beef recipes?

Im planning on making a beef roast tomorrow, and was hoping I can get some tips from the fine folks (and gals!) on this board. This will be the first time I have made a roast.

I am going to slow cook it in a crock pot with carrots (and whatever else you guys suggests that sounds good) all day, and then serve with mash potatoes, gravy and the vegetables that have been cooking with it.

Share your recipes, and any tips would be great!

Easy one:

Braise it brown on a propane grill. Put it in the crock pot with onions, garlic,mushrooms, salt/pepper or Montreal seasoning if you have it. Add one can/bottle of Guinness. Add potatoes, carrots, and celery when roast is 2/3s cooked.

Don't put the carrots or potatoes in until a couple of hours before you eat.

Add some water
1 pack of onion soup mix
a chopped onion
fresh crushed garlic
white pepper
seasalt
half a beer(yuengling)

keep it covered with fluid so the top doesn't dry out.

Pot Roast made right is a mighty fine meal.

Curious why the brazing before slow cooking?

And yes plenty of garlic salt & pepper. In fact rub it in.

How is this for an idea? What if I made up a rub of salt and pepper (and possibly garlic powder?), and apply it to the roast. Once applied, place the roast in a big ziploc bag with more rub mix, and let it sit overnight in the fridge, hopefully sealing the flavor in the meat.

The idea sounds good in my head, how does it sound to you guys?

Is this what you feed the hefties to keep um coming around? Kind of like corn for baiting deer.

It adds a nice flavor (kind of like grilled steak) and looks better.

The wife and I prefer to sear a roast on high heat prior to putting it in the crock. I also like to add beef bullion to intensify the flavor along with whatever seasonings float your boat. Of all the veggies I've tried cooked in with a roast I like celery the best, not sure why.

If you want easy and really good pot roast my wife makes some good ones. All you do is add 1 cup of water and one package of each ranch dressing mix and Italion dressing mix and brown gravy the dry packets. Dont even need to stir. Let it cook for about 5hrs on low and it will be the best roast you ever had trust me. We put the veggies in with the roast at the start.

This is the one me and my wife use. Always turns out good.


Ingredients

* 2 pounds boneless beef roast
* 1 teaspoon vegetable oil
* salt and pepper to taste
* 1 onion, quartered
* 16 baby carrots
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 4 cloves garlic, minced
* 2 tablespoons chopped fresh parsley

Directions

1. In a large skillet over medium high heat, saute the roast in the oil for 15 minutes, or until all sides are well browned. Season with salt and pepper to taste and set aside.
2. Place the onion, carrots, garlic and parsley in the bottom of a slow cooker. Place the roast on top of the vegetables and pour the soup over the roast and the vegetables.
3. Cover the slow cooker and cook on low setting for 8 to 10 hours, stirring once.
4. Transfer roast to a serving platter and place the vegetables around it. Pour the roast gravy from the slow cooker into a gravy boat.

I keep mine simple.

I give the roast a rub of Lowry's Seasoned salt and ground black pepper.

Brown the meat first. I use an iron skillet, high heat, and get the surface will carmelized.

Into the crock goes the roast, one or two peeled and quartered sweet yellow onions per pound of meat, two medium-large peeled carrots, cut to 1/4" thick disks per pound of roast, one stalk of celery per pound, cut small. I discard the leafy junk. Cover with water, set on high and give it at least 2 hours, maybe 3.

Don't be a fussbudget, go read a book or somethin'. When the onions are getting harder to find and the celery is quite soft, you're ready for the potatoes.

About an hour before serving, cut up two peeled potatoes per pound, sliced into 1" chunks, and put them in a large microwave safe bowl with a tablespoon of salt per potato, cover them about 1/2" deep with water, and nuke 'em on high long enough that they boil for at least 5 minutes. When done, drain and rinse, them put 'em in the crock to absorb the juices.

I like a hearty, dark, beefy gravy, so when I put in the roast and water, I add 1 tablespoon of a good beef base (if you rub it between index and thumb and can feel salt granules, it's not the best), 1 tablespoon of Gravy Master or Kitchen Bouquet, and 1 tablespoon of powdered beef/brown gravy mix.

If you like to thicken it, put 2 tablespoons of oilive oil and 1/4 cup of Wondra Flour in a fry pan and slowly stir until it begins to brown. This is your roux, Take out most of the juice from the pot, mix it thoroughly with your roux, and return it all to the pot.

For beef bourguignon, I put in a 750ML bottle of dry red wine first, then top it off with water, all at the beginning.

Just remember, you can't remove pepper, so start small, add more if needed later.

Saltiness can sometimes be reduced by adding potatoes, but it's better not to have too much to begin with. Just understand, the earlier you add the salt, the less you will need overall.

I go around to the local wineries in late spring and buy up their 'older vintages' at clearance prices by the case. Once Memorial Day is past, they like to start their busy season with only he current vintages left on the shelves.

I generally get a case of dry red and a case of dry white for cooking, they average $3-$4 a bottle; you can usually cut a deal for the last bottles of a vintage. I like sweeter wines for drinking, and I'll load up on them then too. It's all about timing, and I make a point of not being a wine snob. A case of modest 'last chance' wine for $35-$45 is not a bad deal for either the winery or the canny buyer. I can usually get a wine industry standard 30% discount, but for these deals I tell 'em I have it, then also tell 'em I'd rather not hit them with that, let's just bargain.

It makes for a nice Spring day's drive; and coming home with 4 or 5 cases of wine in the back of the Honda Wagon for roughy $200 ain't all that bad either... We're 'fixed' for another year.

Use CHUCK Roast, a good beef roast needs to cook oven slow to medium rare so it's not ruined.
Only put the meat in for the first 2/3 of time, then add the veggies and taters at the last third so they don't get mushy.

2cn Beef Consume
Coarse ground pepper to taste
Coarse ground salt to taste
1cn crushed tomatoes
1 cube of chipotle bullion
let simmer and when it's 2/3 done add the veggies and adjust seasoning for taste. Keep it Simple. Get a bottle of solid burgundy or cabernet chilled down to go with it

this isnt beef, but my mom worked second shift and i got crock pot stuff alot. i still make this. its in their cookbook i think. porkchops abracadabra. just brown pork chops or pork steak and place in crock pot. add cream soups and veggies to your own preference. i use cream of celery, cream of mushroom or chicken even will work. add carrots and potatoes or serve with mashed potatoes or over a biscuit or bread. i cook til the bones fall out of the meat. sorry i cant give you a time or more specifics. i just put it all in there and turn it on high and check when i smell it usually.

its great for hotdogs too. sounds strange but they really taste better in the crock pot. i make lasagna in mine too and man its good. just layer it all in, noodles, meat, sauce, cheese, repeat and add just a splash of water. mmmm real ricotta too. just watch out or stuff will burn around the sides where the element is

+1 on the celery. Used to hate it as a kid...now I add it to everything chilis, bolgnese, stews, soups! Mad for it

Ok I have been holding off posting because I havent wanted to screw up my perfect 69 count post but damnit. My personal experience is veggies (preferably celery and carrots) go in when its 3/4 done, good fresh cracked pepper and coarse salt, Guinness, beef consomme. The only other suggestion is to make enough if you are feeding the crowd

My mirepoix (onions, carrots, celery) is for flavor. It goes in roasts, soups, and stews. I am old school, and don't like the crunchy, half-cooked texture that modern foodies do so adore.

Garlic is somethong I reserve for Italian sauces. I don't cook French.

The roast turned out great! Was a hit with everyone how tried some. The beef was so tender it was almost falling apart!

I ended up taking a bit from everyones recipe, so in a way it is kind of my own concoction. I can never let a recipe go without my touch!

Here is what I did:

Ingredients
• Beef Roast > 2lbs
• Potatoes
• Baby Carrots
• 1 can Guinness
• Dry onion soup mix
• Garlic
• 1 Onion
• Kosher salt
• Pepper
• Montreal steak spice
• Olive oil
Preparation
Night before:
1. Using a paring knife cut incisions into the roast. Make incisions about 1-1 ½ deep into the roast
2. In a bowl mix 1 part kosher salt, 1 part pepper and 1 part montreal steak spice
3. Rub mix into roast, apply liberally
4. Place roast in bag with mix, leave in fridge over night
Day of:
1. Apply olive oil to cast iron pan, place on medium-high heat
2. Put roast into cast iron pan, brown all sides
3. Quarter 1 onion, place in crockpot with 1 can of Guinness. Set crockpot to low heat
4. Place garlic in the incisions of the roast
5. Mix in 1 packet of onion soup mix in crockpot, as well as salt, pepper and montreal steak spice to taste
6. Place roast in crockpot on top of onions
7. 2 hours before completion, put baby carrots and peeled potatoes into crockpot
8. After 8-10 hours, the meal is done
