The birdflu outbreak (H5N1) in 2008 was the discovery of single digit numbers of animals in a few different countries testing positive, and in that scenario we culled all the animals identified and were able to prevent a human infection from occurring. There are a lot of medical podcasts about this subject.
Relevant to the current situation:
1. H5N1 never adapted to mammals or got any sort of purchase widely into our agricultural systems in 2008. Nor were many humans in contact with it at all(I don't think even a single human caught it). It was several genetic mutations away from being any sort of threat to humans. There is now a strain widely circulating in dairy cows which is 1 single genetic mutation away from human to human transmissibility meaning every single human infection from close contact with animals is a ticking time bomb for an outbreak.
2. The 2008 outbreak is literally the event almost any epidemiologist refer to as the closest on their doomsday clock to midnight we've come. I'd rather see news that a dozen ebola patients have randomly been discovered in the city I live in than find out a city across the country has wide H5N1 spread. I think the majority of medical professionals would agree with that assessment.
From the way things are going though you won't need to take my word for it we'll be stacking bodies soon enough.
In all of our records there has never been a human transmissible H5N1 outbreak, but the case fatality estimate conservatively is 40% with a high band of 60%. It will likely be in that higher range for younger healthier people due to the way it activates your immune system. Either way, the price of eggs is negligible in comparison to the consequences for an outbreak, and an outbreak is most certainly not inevitable with a modicum of actual leadership.
