I’ll be doing 3 racks of these:

3-2-1’s, prime ribeye, and spatchcock chicken for the wife.
Had to look up “spatchcock” and I thought I was pretty well versed in the way of prepping meals. For those like me that didn’t know:
To spatchcock a chicken, or butterfly it, is to remove the backbone, thus allowing it to be completely opened out and flattened. Doing this reduces the cooking time significantly and allows the whole bird to be cooked in different, speedier ways, such as grilling or pan frying.

Made 31 pork butts to sale, and threw on a couple brisket for the family tonight. Put the brisket on at 9:00pm last night and just now put them in the cooler to rest at 2:00pm. Having brisket tacos tonight.

Right now, I've got 2 racks of spare ribs, 12 lbs. of pork shoulder, and a little brisket point on the smoker. I'm using wild American Black Cherry I cut down for smoke, which I have to say is my favorite smoke wood by a country mile. Anybody else tried Black Cherry?
