Ditto on the Lem and cayenne but I suck at cutting Jerky so I grind it all up stuff it in the jerky cannon, and shoot it directly on the dehydrator trays.
 
Thin slices and make a marinade with the list below. Dump it all in together and let it set in the fridge for at least 24 hours. I don’t measure, I go off taste while mixing together.

soy sauce
liquid smoke
black pepper/cayenne pepper if I want warm
brown sugar

I do it pretty similarly with beef and it turns out great.

OP, if you're looking for a good dehydrator, check out the Excalibur brand ones.
 
If you like heat, boil fresh or dried hot peppers in a small pot. Habanero adds good heat, jalapeño adds good flavor imho. Strain over a mesh colander. Chill liquid. Take just enough liquid to well moisten meat and add #1 cure according to trimmed meat weight. Add black pepper. Mix into sliced meat and cure in frig for 24+ hrs.

I do the same. Don’t over think it. Just add other spices, like Jerk seasoning, that sound good. Adjust sugar per taste. I add onion and garlic powders too usually.
