Maybe the traction control shuts down the tires with less traction? It probably wouldn't know the difference between ice or air. Nonetheless crazy is as crazy does.
 
How do they keep the uphill tires from spinning?

The vehicle had to be prepped for this stunt no doubt. they have the brakes isolated to one side or the other with a device called a " line lock" normally used in drag racing to isolate brakes front to back. Since a differential always sends power to the wheel with a least amount of traction and a locker sends power to both wheel this is the only way it could be done. As soon as the driver got it on two wheels he would have flipped a switch and isolated the brakes side to side and mashed on the brake pedal to engage the "uphill" brakes.
