It's crazy easy to make, and can be personalized to your taste:
2-3# ground meat
3-5# potatoes
1-2 cans tomato paste
spaghetti (or pasta of your choice)
Peel and cube potatos while you brown and drain off the ground meat (season as you like)
I keep my cubed potatoes in water to keep them from discoloring and to later use that starchy water as a mild thickener
after the meat is drained put it back into your pot and stir in tomato paste (1-2 cans) and season heavily with dried chili powder and whatever other seasonings you like. What you're looking for is basically a ball of meat held together by the tomato paste
dump your potatoes and their water into the pot, add some water if needed to cover everything and give the potatoes adequate water to boil/simmer
check seasonings and cook until the potatoes are done
once the potatoes are cooked add your dried pasta and let it cook in the gravy. For spaghetti I break it in half or thirds but that's just preference
after the pasta has cooked it's done, just readjust final seasoning and let it set for about 15mins to thicken up. If it's too thin you can always add a bit more pasta to thicken it. If it's pure cement just adjust with some water. As with most such dishes, it's better the next day.
Its purely done to taste and texture the whole way through, the potatoes absorb a lot of seasoning and become the star of the dish, but also means a little attention keeping the whole thing adequately seasoned. I've thought up about 10 ways to "improve" the recipe, but never messed with it because it would taste "wrong"to me having only ever had it the way my Mawmaw and father would make it. Feel free to experiment and let me know what you came up with. If you've got a grasp on the technique of the dish you could really make it something phenomenal without much cooking effort.
