Living in MN, we always referred to them as crayfish.Couple threads about boiling CRAWFISH n stuff indicates some people like CRAWfishez.

Confused peeplez.
Dam crustaceans.
I'm up here in Canada, and have never had a "crayfish" or a "crawdad" or a "mudbug" but that don't mean I don't want to try 'em. I sure do.
I started this thread out of concern for the hide being inclusive..... I know you fucking stinking filthy commie shitbird Yankees didnt know what a Crawdad, mudbugs, yabbies, mudpuppy, in the other threads were.. you know me, an inclusive humanitarian, now you filthy dam yankees can go read the other threads and understand what us Americans are talking about.
I would not eat them out of a Chinese buffet. If you do, you will prob shit like a tied coon!Crayfish are hard to find up North unless you know where to look: Chinese buffets and Asian supermarkets. Not every Chinese buffet features them, but when they do, they're spicy and undergrazed, 'cause many up here have no clue.

Jambalaya and gumbo is great with them as well.
