Crayfish are hard to find up North unless you know where to look: Chinese buffets and Asian supermarkets. Not every Chinese buffet features them, but when they do, they're spicy and undergrazed, 'cause many up here have no clue.

Boiled is good but really it's all the fixings that go with it that make it really good in my opinion.
But what makes mudbuds great is Crawfish etoufee, all the goodness and more and somebody else has allready cleaned them all so just dig in.

You're looking in the wrong spots. My parents live on a Lake in northern Minnesota and those little bastards are everywhere

We love us some Craw Daddy's here. We even made a holding cage that hangs under our Dock for when we have more than we wanna boil at the moment. When my Boys were small we'd camp out at the Covered Bridge which was just down the road from our house, and make a 2 day event outta it. That was a blast......

That piece of plywood in the top left corner is where the cage hangs.

@1J04

When I was 15 we took an awesome trip up through Washington.

I have great memories of stopping at that bridge to check it out. After crossing to what I remember was the south, on the left was a marionberry bush the size of a school bus. Someone let us at it and we picked and ate a ton of berries.

And yes. Crawfish are a delight. Boiled, etoufee, never had one I didn't like.

My buddy is from Houma so I have called then mudbugs since we became friends.
Going to Abita this summer to visit Family. Prolly eat a pile or two then.

There are only a couple of species of crawfish harvested commercially. But there are well over a hundred more obscure species across the southeast and likely many still unknown. Today's not on the menu crawdaddy is the Camp Shelby burrowing crayfish. Even if you've been there, you haven't seen it.
