Staying just off the coast of Israel would put them just under 1K miles from Tehran and most of eastern Iran.
I am not aware of any Iranian assets with legs that long.
Perhaps they are avoiding the Straight to stay out of direct combat radius/range of Iranian air assets as well as not being a juicy target for some cheap POS, low-tech Iranian sea drone.
